Mise en place is everything, and prep work makes the dream work! This phrase shows how vital meal prep is to each and every restaurant.

Meal prep. That’s the daily bread of every chef, cook, pastry chef or baker before they start serving food to customers. They prepare stocks, fondue, glazes and bases, cut fresh veggies in a hundred different manners, and assemble sauces, mayonnaises, flavoured oils, etc. They fillet fish, debone and cut meat, prepare sous-vide, pasta, purees… and do everything that can be done in advance without compromising the quality of the final product. During meal preparations, the chefs have peace and quiet to concentrate on cooking without the pressure and stress of incoming orders. CIRCULAR ECONOMY

We believe in sustainable technology and innovation and respect the environment.

We use carefully selected ingredients and have the expertise to rescue and further process farm products that would otherwise be difficult to use because of minor imperfections that mean they don’t meet the market standards. We cook using various energy sources, mainly from solar panels and residual heat from the freezers, making us very efficient. We process spent bones and vegetables, which some might consider garbage, as a valuable organic product. We send them to biogas plants, where they are turned into a valuable and clean source of energy. The residuals from the biogas plants are used as high-quality fertiliser for agriculture, and we thus turn a full circle.

Carefully selected ingredients are roasted to bring out their flavour. We put the roasted bones and vegetables into a special cooking pot, which cooks them slowly and gently in water infused with herbs and spices, just like a stock should be!

When cooked, the stock undergoes a special technological treatment that allows us to package it while hot into an airtight container, guaranteeing the maximum possible quality of the product for its entire shelf life.

First you’ll prepare a garlic confit in oil and butter over 12 hours and then make into a roux, dilute with vegetable stock and soften with milk and cream.
